I’m not gonna lie, I wasn’t terribly looking forward to trying the Costco sweet kale salad — especially because it comes as a duo, or in two giant two-packs. I enjoy kale, broccoli, Brussels sprouts, and cabbage. Just not in such huge quantities.

But I was pleasantly surprised by this salad kit, mostly because I found a way to prepare it that was a little more in line with my personal tastes. But more on that later!

In addition to the greens, this salad kit duo comes with toppings, including pepitas and dried cherries, and a sweet poppyseed dressing.

Flavor Rating

I was actually really surprised by how good this salad kit tasted. In all fairness I did roast the veggies on a sheet pan, which I think enhanced the flavor of the greens, but the poppy seed dressing was also surprisingly flavorful, and I’ve been on the hunt for a good sweet salad dressing.

The toppings, pepitas and dried cherries, were nice, but the pepitas got a little lost in the mix. On my next go-round with this salad, I’ll probably add some croutons and pecorino cheese.

Preparation Rating

This kale salad is very easy to make (as are most bagged salads). Just throw the ingredients together in a bowl, and you’re ready to go.

I took the additional step of roasting the vegges (which I’ll explain later), which added some time, but not enough that the extra effort wasn’t worth it.

Cost Rating

The Costco sweet kale salad duo offers about four times what you’d get at a traditional grocery store. At $7.48 for a two-pack, that’s a steal of a deal!

All you need to do to prepare this sweet kale salad is to toss the ingredients together and add whatever protein you’d like (if you’d like at all).

But I went a step further and roasted the greens because I get sick of raw salads very easily. It’s also November, which means it’s prime time for roasted veggie salads!

If you want to roast the veggies in this salad, here are the steps you’ll need to take to do so:

1. Spray a metal sheet pan with cooking spray. I use Chosen Foods avocado oil, but you can use whatever non-flavored cooking spray you have on hand. Terra Delyssa olive oil poured into a spray bottle would be another good choice.

2. Dump the greens onto the baking sheet (remove the toppings packet).

3. Spray the greens with more cooking spray.

4. Season with salt and pepper to taste.

5. Pop in a preheated 350 F oven for 10 minutes.

I also topped my greens with Amylu cranberry jalapeno chicken meatballs for some added protein!

Costco recommends eating this kale salad with the ingredients provided, or adding cooked quinoa, which I think is a little ho-hum. I definitely recommend roasting the greens in this salad mix duo, but you can also use it in these other ways, too.

Add Amylu Chicken Meatballs

I topped my roasted salad greens with the provided nuts, dried fruits, and dressing. I also added some Amylu chicken meatballs because the jalapeno and cranberry variety went well with the other toppings.

If you’re a fan of these meatballs, I definitely recommend eating them this way!

Top With Costco Sirloin Grass-Fed Beef

Tomorrow I plan on eating the salad greens raw and topping them with some Costco sirloin grass-fed beef strips, as part of the reason I bought this beef was to use it on salads.

I have some leftover cilantro lime sauce from the Costco chicken taco meal kit, so I plan on mixing the cabbage greens with that to make a coleslaw.

Make Coleslaw

Speaking of coleslaw, you could use these greens simply for this purpose. Since the greens consist of kale, cabbage, Brussels sprouts, and radicchio, this salad kit duo is basically a coleslaw base already.
